Salmon Tartar

Salmon Tartar

Ingredients

  • 300 gr. of fresh salmon 
  • 1/2 spring onion 
  • 1 tablespoon mustard 
  • 1 tablespoon soy sauce 
  • lime juice 
  • 2 citrus caviars 
  • salt and AVOE 

Preparation

  • Cut the salmon into small cubes and place in a bowl.
  • Add the chopped spring onion and mix.
  • Then add the soy, the squeezed lime, the salt and the AVOE. We can go testing to be rectifying amounts if necessary.
  • Leave to macerate for at least half an hour in the fridge covered with cling film.
  • Fill a circular mould with this mixture, pressing well so that the tartar takes consistency and when unmoulding, add the citric caviar on top.
Lemon sorbet

Lemon sorbet

Ingredients

  • 4 lemons 
  • 4 citrus caviars 
  • 150 gr. of sugar or any other sweetener in its absence. 
  • 500 ml of water 
  • 2 egg whites 

Preparation

  • We start preparing a syrup for which we heat the water with the sugar over medium heat and bring it to a boil stirring until the sugar has dissolved. Remove from the heat and wait for it to cool.
  • Squeeze the juice from the lemons and add it to the saucepan with the water and sugar, which should already be at room temperature.
  • Cover and leave in the freezer for 2 hours.
  • In the meantime, whip the egg whites and beat them until you get the right texture.
  • Take the bowl out of the freezer to gradually add the egg whites and stir.
  • Keep the mixture in the freezer until serving time, when we will add the citrus caviar in each glass.
